WINEMAKING METHODS

Grapes are hand picked early in the morning and processed the same day. Fermentation with skin contact lasts 21 days on indigenous yeasts under temperature control. Wine is aged for six months in new tonneau oak barrels.

Testament vineyard is located on the hillsides of Jadrtovac, 70 to 100 m above sea level. Vines are planted in limestone karst with less than 20% soil – these harsh conditions result in premium grapes. All vineyard work is completed manually and wine is certified organic.

TASTING NOTES

Yellow wine with an aroma of dried fruits, aromatic herbs and sweet spices. The flavour is complex, very mineral and fresh.
