WINEMAKING METHODS

Grapes are handpicked early in the morning and processed same day. Fast processing (the fruit is destemmed and crushed with two hours of skin contact and only free run is used). Fermentation lasts for two months with lees stirring. Second fermentation (classic method) occurs in the bottle and lees stirred for 12 months.

Testament vineyard is located on the hillsides of Jadrtovac, 70 to 100m above sea level. Vines are planted in limestone karst with less than 20% soil – these harsh conditions result in premium grapes. All vineyard work is competed manually and wine is certified organic.

TASTING NOTES

Sparkling rosé wine with an aroma of vineyard peach and wild flowers. The flavour pairs well with the aroma – it’s well-balanced, full-bodied and fresh.
