WINEMAKING METHODS

Grapes are picked early in the morning and processed the same day. Fermentation with skin contact lasts ten days on indigenous yeasts under temperature control at 23°C. Malolactic fermentation is spontaneous. Wine ages in a mix of used American and French oak for six months.

Testament vineyard is located on the hillsides of Jadrtovac, 70 to 100 m above sea level. Vines are planted in limestone karst with less than 20% soil – these harsh conditions result in premium grapes. All vineyard work is completed manually and wine is certified organic.

TASTING NOTES

Red wine with a dark ruby, opaque color. It has an aroma of ripe red fruit, dark chocolate, and spices. The flavor is opulent with lively acidity and firm structure.
