The Steps our farmers follow to produce Fresh Batch every time. Rain forest Certified
1.Harvest and Fermentation: Harvest cocoa beans and ferment them for flavour development.
2.Drying: Dry fermented beans to the desired moisture level.
3.Roasting: Roast dried beans to enhance chocolate flavour.
4.Cracking and Winnowing: Remove outer shells from roasted beans.
5.Nib Roasting: Roast nibs again for cocoa flavour.
6.Grinding: Grind nibs into cocoa liquor.
7.Hydraulic Pressing: Extract cocoa butter, leaving cocoa cake.
8.Milling: Mill cocoa cake into cocoa powder.
9.Optional Dutch Process: Alkaline treatment for Dutch-processed cocoa.
10.Sieving and Packaging: Sift, package, and prepare for distribution
