CEO Export Manager at Bodega la Cepa de PelayoDear Aurimas, I’d like to introduce Bodega La Cepa de Pelayo (Alcalá del Júcar – Spain) , where Mr. Juan Antonio Ponce, our winemaker, well appreciated for instance, in the US wine markets and considered as Bobal’s grape Gurú here in Spain, is working carefully elaborating under ecological methods (our fresh vintage 2019 was already certified as Organic), using concrete deposits for alcoholic and malolactic fermentation, and one point that become our wines as “special ones” is aging them on lees for more than 7 months (young and oak wines) after the fermentation, and applying natural stabilization and clarification, just to comment on some of our strengths.
We don’t elaborate on “young” wines as the most of wineries (wine of the year). We keep the fermented wines in 14 concrete deposits, 8-9 months more, getting more complexity, bodyness, etc.
The winery is the dream come true of Pelayo’s family, 3rd generation, their ancestors managed a cooperative here in Alcalá del Júcar, and now, they are getting the essence of these old vineyards.
Our catchword “The essence of wine”, show wines with a mix of Art and Architecture (labels are based on Dutch Neoplasticism and Avant-Garde painter/artist’s work, Piet Mondriaan, XIX c.) and Traditional elaboration (ecological elaboration methods, 3rd wine generation of Pelayo’s family).
We have mainly three brands: OLE, CUPIDO and CEPA DE PELAYO ( Bobal and Macabeo are our Indigenous Varietals) bobal (vins with more than 70 years old), although we use old vins for whole wine elaboration, and we stay them on lees, that’s our main quality strength. We don’t use artificial methods for stabilization, clarification, just natural ones by cooling. For oak barrel wines, we use 64 French oak, 500 liters, just to avoid as you know, too much wooden flavor on them. Of course, previously, we stayed on lees as well, for 9-10 months long.
We produce a total of 100.000 bottles with a potential volume of 300.000, a signal of our high quality, as we are not a factory, but a family, of course.
