WINEMAKING METHODS
The grapes are macerated for three to eight hours in low temperatures. The wine is produced with the sur lie method: stirring the fine lees for 24 months in 500L wooden barrels. Three kinds of barrels are used: American oak, French oak, and Slavonian oak. All barrels are medium toast.
The grapes for this wine come from old vineyards in Smokvica that are considered to be the best sites for this grape variety. The grapes are hand-harvested and are grown on three types of soil: red soil, sand soil, and rocky soil. All vines are older than 40 years old and the yield is low.
TASTING NOTES
The wine has a deep golden color. Aromas are pronounced and display ripe stone fruits such as peach and apricot, yellow flowers, vanilla, toast, brioche, and almonds. Its a dry wine with medium+ body, medium acidity and long finish.
PAIRING SUGGESTIONS
Pairs well with grilled white fish and other seafood such as scallops or squid. Also goes well with creamy pastas and matured cheese.
