WINEMAKING METHODS

Grapes are picked early in the morning and processed the same day. Fermentation lasts four weeks on indigenous yeasts under temperature control. Lees are stirred during fermentation and wine is aged for four months in new 500L oak barrels.

Testament vineyard is located on the hillsides of Jadrtovac, 70 to 100 m above sea level. Vines are planted in limestone karst with less than 20% soil – these harsh conditions result in premium grapes. All vineyard work is completed manually and wine is certified organic.

TASTING NOTES

White wine with an aroma of ripe white fruit. The flavour is fruity, with a gentle hint of oak; well-balanced, full-bodied and vibrant.
