WINEMAKING METHODS

Grapes are harvested early in the morning and processed the same day. Fermentation with temperature control lasts for four weeks. Lees stirred for two months.

Testament vinyard is located on the hillsides of Jadrtovac, 70 to 100 m above sea level. Vines are planted in limestone karst with less than 20% soil – these harsh conditions result in premium grapes. All vineyard work is competed manually and wine is certified organic.

TASTING NOTES

White wine with an aroma of stone fruit, apple, orange flower, and Dalmatian karst aromatic herbs. The flavour is intensively mineral and fresh, with a mid body and structure.
