WINEMAKING METHODS

Grapes for this wine come from the vineyards located in the central part of the island of Korčula, around Smokvica, which is also a cradle of this variety. These are old vineyards with traditionally best sites for growing Pošip. They are located at the altitude from 40 m to 160 m above sea level. Soil types are different: red soil, sand and rocky soil. All vineyard work is performed manually. The date of the harvest is determined by constant monitoring of grapes before the harvest. Grapes are hand harvested and selected. Harvest is done early in the morning, in order to preserve freshness and aromas in the grapes.

Selection of handpicked Pošip grapes is additionally performed in the cellar. This is a delicate variety and requires a lot of attention. Upon arrival to the cellar, grapes are cooled and protected from harmful effect of the oxygen during processing. Grapes are crushed with minimum pressure. The must is cooled and settled during the night. Fermentation takes place during 3–4 weeks in stainless steel tanks under strict temperature control at 15ºC.

TASTING NOTES

Fresh and harmonious white wine with floral aromas, aromas of citrus fruits, stone fruits and Mediterranean herbs. It shows great minerality and balance between the freshness and complexity of the variety.

PAIRING SUGGESTIONS

Pairs with fish and other seafood dishes, such as shellfish or octopus salad. It also goes really well with white meat and strong cheese.
