“Insects as food or edible insects are insect species used for human consumption, e.g., whole or as an ingredient in processed food products such as burger patties, pasta, or snacks.” Wikipedia
Experts estimate that more than 1900 different species of edible insects are consumed globally. It includes butterflies, beetles, ants, bees, wasps, grasshoppers, crickets, termites etc. The market is forecasted to be worth US$ 710 billion by 2026.
If insects had been consumed for a long time in some regions of the world (Asia, South-America, Pacific etc.), they have been introduced in the Western markets more recently and under non-recognizable forms to arouse the interest of consumers.
For e.g, the Food Industry uses edible insects in processed powders and flours destined to industrial bakery or snacks. Especially in Europe, there has been a rising demand for insects as a protein supplement in bars.

Insects have a high nutritional profile :

- A source of amino acids, omega 3 and fibers

While they are a less processed food and more nutritious than many foods we eat today ; they are also a sustainable raw material for the industry : with their high nutritional value they are a perfect alternative to meat, fish or soy thanks to their production process which requires less water or feed and rejects fewer emissions. For e.g, a crickets’ production requires 12 times less feed than cattle or 4 times less than sheep for the same amount of protein.
So, insects are considered as a sustainable way to feed the growing humanity for good reason because they can be produced in massive quantities without hurting the environment while delivering quality nutrition to consumers.
