Vines: Average age 17 years old, planted in sandy, light soil delivered from parent limestone. The management and the development of the ecosystem is entirely based on Bio-Agricultural practices (the vineyard is under the process of certification)

Harvest period: Merlot 10-13th August, Syrah & Cabernet Sauvignon 22-25th August

Maturation: after malo-lastic fermantation has taken place into stainless steel tanks, there is a 5 months period of “batonnage” on light wine lees and micro-oxygenation

Ageing potential: 5 years

Analysis: 13.1% alc. by vol., residual sugars 2.1 g/l, total acidity 5.4 g/l in tartaric acid, pH 3.49

Serving temperature: 14-15 °C

Recommended pairings: Greek vegetable dishes, mousaka, pork-sausages-burger bbq, pasta with beef or rooster, casseroles (stews) 

Winemaker’s tip: a serving temperature of 13-14 °C is the right way to enjoy this summer red wine
